~ Carving Station ~

Carving stations are a perfect way to add to the festivities, while creating a special dining experience for your family and/or guests.

GARLIC AND PEPPER CRUSTED TOP ROUND OF BEEF

Served with au jus, horseradish, and condiments.

ROASTED TURKEY BREAST

Seasoned with sage. Served with cranberry sauce and gravy.

CARVED HAM

Served with pineapple sauce.


~ Build-Your-Own ~

Build-your-own options are popular options for casual events which could include parties, weddings, and employee luncheons.

SLIDER BAR

Guests top their 2 slider buns with chicken, pork, or bison and dress them up with four toppings. Choose from sweet potatoes, blend of sliced cheeses, roasted peppers, tomatoes, lettuce, caramelized onions, sautéed mushrooms, coleslaw, beets, or pickles. BBQ, chipotle mayo, VOM FASS oil and vinegar, and ketchup are available for the final touch.

NACHO OR TACO BAR

Guests select their choice of chips or soft and hard shells and their choice of chicken, beef, or chorizo meat. Toppings include five of the following options: shredded cheese, melted cheese sauce, tomatoes, lettuce, onions, sour cream, salsa, cilantro, refried beans, black beans, cilantro or white rice, guacamole, jalapenos, black olives. Hot sauce and mild sauce are included. Add barbacoa for $2/person.

PASTA BAR

Guests start with delicious pasta and their choice of grilled chicken, andouille sausage, or meatballs. Veggies include two of the following options: zucchini, broccoli, carrots, red peppers, mushrooms, green onions, and spinach. Mix and match up to two sauces, such as Marinara, Alfredo, and Pesto. Rodeo Wagon will provide the appropriate pasta to fit the selections. When adding an additional meat choice, 1 extra vegetable is included.

MASHED POTATO SUNDAE BAR

Guest start with mashed potatoes in a sundae cup and then add four of the following toppings: gravy, sausage, bacon, cheddar cheese, broccoli, sour cream, chives, roasted peppers. Host may substitute mashed for baked potato.

Deep flavors of the south include Rodeo Wagon’s custom blend of seasonings and feature Andouille sausage, ham, trio of peppers and other vegetables. Served over seasoned rice and topped with a whole crawfish.

PICKLED PIGLET

A slightly spicy pork sandwich, served cold, garnished with pickled carrots and dressed with sriracha mayo. 

TEXAS BACON BURGER

All beef patty topped with bacon and Texas Caviar, served on a gourmet bun with optional ketchup and mustard.

WISCONSIN BRAT

Wisconsin beer brat, served on a brat bun with optional toppings of sauerkraut, brown mustard, and onions.
